Coronation Chicken
Creamy chicken with a hint of curry, flavoured with tangy chutney and an added crunch of slivers of almond. A versatile chicken dish that can be eaten on its own cold or warmed up. Add this to your favorite bread and you have a meal fit for a queen!

CREAMY
Coronation Chicken
A recipe fit for a queen! This dish was created for the coronation of Queen Elizabeth II in 1953, when the nation still under rationing restrictions, this dish was considered extravagant. A creamy chicken dish, commonly used as a sandwich filling, can easily be adapted as a chicken salad or served warm with rice.

Ingredients
Chicken Salad Ingredients
- 3 Cups cooked chicken (white meat)
- 2Tbsp spring onion
- 10 dried apricots
- 2 Tbsp sliced almonds – toasted
- 3 Tbsp fresh cilantro – chopped
- 3 Cups Arugula (or salad leaves)
- Salt to taste
Salad Dressing Ingredients
- 1/3 Cups yogurt
- 1/4 Cup mayonnaise
- 1 Tsp curry powder
- 1 – 2 Tsp Lalies Rooibos Infused Chutney
- 1/2 Tsp paprika
- 1 Tsp lime juice


Step by Step Instructions
STEP 1 – Prepare dressing
Prepare the dressing. Mix yogurt, mayonnaise, curry powder, Lalies chutney, paprika and lemon juice in a bowl. Add more curry powder if you want a more spicy taste.
STEP 2 – Roast almonds
Toast almonds in a dry pan on medium heat. Shake the pan regularly until the almonds are medium brown. Immediately remove from heat and place in a separate bowl. Let it cool.
STEP 3 – Prepare chicken
Cut chicken into bite-size chunks (ours are approx 1/2 inch blocks). We used cooked chicken breasts. You can also shred your chicken if you wish. We used steamed chicken, but you can also use roasted store-bought chicken, whatever you have available.
Tip – for a more juicy chicken breast, poach your chicken in chicken stock with fresh herbs, such as thyme. bay leaves and parsley.
Slice spring onions.
Chop apricots in small chunks (approx 1/4 inch size).
Chop cilantro.
STEP 4 – Mix ingredients
Combine chicken, spring onions, apricots, almonds, cilantro and arugula.
Tip – Substitute the apricots with fresh apple, raisins or fresh grapes. For the almonds, you can also use other nuts such as walnuts
STEP 5 – Mix
Add dressing to the bowl and mix it all together. Add salt and pepper to taste.
STEP 6 – Enjoy!
Garnish with additional sliced apricots and roasted almonds if preferred. Serve with fresh bread/bagels or as a refreshing salad on its own!
